Coconut Palm Sugar




Why we are loving coconut palm sugar right now!

Drawn from the sap or nectar of the palm tree flower, it measures low on the glycemic index (35-Gl), lower than agave (42), honey (55), and cane sugar (68).

According to the Mayo Clinic, low glycemic index foods, "...may help control appetite and delay hunger cues, which can help with weight management. Balanced blood sugar also can help reduce the risk of insulin resistance". 

Coconut palm sugar is also nutrient rich - high in many vitamins and minerals such as Potassium, Magnesium, Zinc, Iron, and vitamins B1, B2, B3, B6 and C. 

This nutrient high, cane sugar alternative fuels the body with energy! 

Not only is it nutritious, it's also ecologically sustainable! The Food and Agriculture Organization has even named this the world's most sustainable sweetener. According to Big Tree Farms, "tropical coconut palms are an ecologically beneficial tree crop that grow in diverse, wildlife supportive agro-ecosystems, restore damaged soils and require very little water. They are also far more productive than sugar cane, producing on average 50-75% more sugar per acre."

Plus, coconut palm sugar has a very similar consistency to brown sugar, thus can easily be substituted for granulated sugar as a healthy alternative in recipes :)
